kepada semua tentang peralatan2 asas untuk penyediaan makanan...Pisau bukan sahaja menjadi sahabat karib kepada tukang masak ketika didapur malahan ianya merupakan alat seni yang jika pandai digunakan..dapat manghasilkan satu hasil kerja yang menarik untuk tatapan umum...contohnya vegetable carving...butter sculpture dan lain2 form of art and decoration yang berkaitan dengan bahan2 masakan...Matlamat sebenar penggunaan pisau semasa didapur ialah untuk memotong...the key word is 'potong'...Tetapi bukan semua jenis pisau itu sama....dan ada diantaranya hanya sesuai untuk memotong certain2 benda sahaja....Pisau potong daging bentuk lain...pisau potong ikan bentuk lain..pisau potong roti bentuk lain....akan tetapi..ada satu jenis pisau yang boleh dikatakan mampu untuk memotong semua benda..ia dikenali sebagai..French Knife @ Kitchen Knife.. &lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#330099;"&gt;Pisau hendaklah senentiasa dalam keadaan tajam....dan untuk memastikan ianya tajam..pisau haruslah diasah..sekurang2nya seminggu sekali...bergantung kepada kekerapan penggunaannya...untuk mengasah pisau...kita boleh menggunakan batu pengasah..(yang warna kelabu ) ataupun Butcher steel (besi bulat bentuk silinder)...jika mengasah menggunakan batu pengasah....make sure asah mengikut satu arah sahaja....condongkan mata pisau 45 darjah..pas tu asah ikut satu arah sahaja... &lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#330099;"&gt;Memasak ni ialah salah satu dari cabang seni...jadi pastikan seni memasak itu dipelajari dari sumber2 yang betul....dalam dunia masakan....citarasa adalah satu yang subjektif...ada yang suka masin..ada yang suka manis...ada yang suka pedas..ada yang suka kurang pedas....jadi sebagai tukang masak yang baik....kita mesti dapat balance kan kesemua format rasa tadi dalam satu masakan yang boleh diterima rasa oleh semua jenis pemakan...thats why kalau kita pergi restaurant...ada table salt dan sugar container kat atas meja....so they can adjust to their own taste mengenal dunia masakan dengan lebih dalam...suka saya menerangkan tentang benda2 asas dalam masakan dan cara dan sukatan penggunaannya ketika memasak...unit ukuran yang standard bagi mengukur julat atau jumlah penggunaan garam, gula dan rempah2 ratus yang lain ialah dengan menggunakan Table spoon ataupun tea spoon.... tapi kalau dah masuk bab penyediaan makanan untuk Banquet size.....dah tak relevan lagi lah Table and tea spoon tu...kekekeke...kita kena pakai senduk plak.. &lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#330099;"&gt;Memasak ni terbahagi kepada beberapa teknik bahagian...satu ialah penyediaan makanan secara mentah (raw) biasanya melibatkan penyediaan salad, ulam dan dari jenis tumbuh2an dan juga buah2an....kebiasaannya teknik ini tidak menggunakan sebarang unsur api (heat)...dan yang keduanya ialah penyediaan makanan secara direct heat...seperti Pan fried, Grilling, oven bake dan yang berkaitan dengan penggunaan api secara keseluruhannya...ketiga ialah penyediaan makanan secara kukus dimana wap air digunakan untuk memasak sesuatu makanan (contohnya jagung, kueh pau, ikan dan lain2).. &lt;/span&gt;&lt;/strong&gt;&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;&lt;span style="color:#6600cc;"&gt;&lt;strong&gt;&lt;span style="color:#330099;"&gt;Untuk setiap teknik masakan itu..kita kena tahu peraturan dan juga prinsip2 asasnya...contoh...penyediaan makanan secara mentah haruslah menggunakan bahan2 yang segar dan tidak mudah basi layu ataupun masam...Penyediaan makanan yang menggunakan api.... wajib menggunakan mentega ataupun minyak untuk mengelakkan bahan2 masakan tadi dari melekat di kuali ataupun griller (tertakluk kepada menu masakan)..&lt;/span&gt; &lt;/strong&gt;&lt;/span&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;/div&gt;&lt;br
